I would so walk a mile for...

some good Mexican food!!! Yes, it's time again for Mama Kat's writing prompt!

But sadly, around here - there are no good Mexican restaurants! I would have to walk about 500 miles...

Man do I love me some good Mexican food! I wouldn't just walk a mile for some right now, I would totally do some unsavory things (OK, couldn't come up with something more specific at this moment) to get some good Mexican food right now!

The best Mexican food I've ever had was in Tucson. I spent a year there in graduate school. And I'll be damned if I didn't eat Mexican food at least twice a week! Probably more like 5 times a week. I would have so totally been in heaven had I been pregnant while I was there. I think through every pregnancy I've dreamed about the food there... from the taco shacks to the fancy restaurants...

Oh, the rolled guacamole tacos and the machaca burrito were totally my favorites. But the best thing in the world? There was this restaurant down the street from my apartment that had a Sunday breakfast buffet. Me and a bunch of my friends from the apartment complex would go out drinking Saturday night and then we'd all go out to the breakfast buffet on Sunday morning all hung-over or still drunk from the night before. Oh I can still taste the cheese enchilada casserole. And I've tried so hard to find a recipe that would taste anything like it!

So that's what I would totally walk a mile for.

Mmmmmm... I'm totally craving Mexican food now!

And tell your daughter that the sooner she starts shaving, the longer she has to keep shaving for the rest of her life!

I'm with you on this one... I swear I married my ex just to get his aunt's homemade tortillas and beans on a regular basis ;). Strangely enough, though, the one time I couldn't eat Mexican was when I was pregnant! The IDEA of it made me want to hurl. But the minute my daughter was born? Enchiladas Supreme, baby!

There was a reference on Gilmore Girls about taco's being the ultimate hangover food. I guess they were right!

Mmmm... good Mexican sounds great to me. We have some good Mex places here even in our podunk town. My Love grew up in SO. Cal and loves REAL Mexican food.

I'm so with you on the Mexican food thing... I offer:

Quick and Hearty Tortilla Soup
1 lb. ground chicken or turkey
1 large (48 oz) box chicken broth
2 cups tomato juice
1 ½ cups cooked rice
2 tablespoons dry quinoa
1 package taco seasoning
1 can black beans, rinsed
1 can corn, drained, or use frozen
1 medium onion, chopped fine
1 cup diced carrots
1 cup diced celery
5 or 6 pepperoncinis, chopped fine, or other equivalent hot peppers
1 tablespoon minced garlic
chili powder
cumin
black pepper
lightly crushed tortillas
In soup pot, cook down carrots, celery and onion with a splash of olive oil. Add a tiny bit of broth as needed if it starts to stick.
In a separate pan, cook ground chicken or turkey with the taco seasoning, cumin, chili powder, and black pepper to taste.
As the veggies have cooked a bit, add corn, garlic, peppers, and black beans. When everything is hot through, add chicken/turkey mixture, tomato juice and chicken broth.
Bring to bowl, add quinoa and rice, and lower heat to a simmer for 20 minutes or until quinoa is cooked. Taste test for seasonings. Serve with crushed tortillas on top.

I live in a town that has authentic mexican food. Couldn't live without it.

Thinking about mexican food makes me want to have it for dinner tonight!!!

I'm trying to diet and now I'm totally needing Mexican food. Must make a stop tomorrow for turkey and taco shells. Free Meal here I come. :)

I love real mexican food but what I really really love is Tex-Mex. Not the stuff that pretends to be Tex-Mex but the real deal. That's probably because I live in Texas. I know what we are having for supper tonight.

How do you not have mexican food where you are?? That would be awful. I mean I can think of awfuller stuff, but still. That sucks. Have you tried your hand at cooking some??
